Ingredients for 4 people:a rack of lamb (about 1 kg)
6 thin slices of baconolive oil, rosemarysage, garli claurel salt pepperWell well chop a clove of garlic, the little leaves of a sprig of rosemary, sage and two sheets of laurel. Place meat in a container bottom, go with a brush soaked in olive oil and then sprinkle with the chopped aromatic. Cover the bowl with plastic wrap and rest for a whole night lascire cool. The next day clean from the minced meat and mettire aside. Put the lamb in a roasting pan, cover with slices of bacon, add salt, pepper and bake at 200 ° C for one hour. Important: brush the lamb occasionally, with the oil and the chopped the day before. Remove the bacon and allow to brown the meat to 220 ° C for 1/4 of an hour. Serve on a wooden platter with a side of potatoes and seasonal salad.
