Speciale festa della donna

Cari utenti,
la giornata internazionale della donna (comunemente definita festa della donna) si avvicina. Ricorre l'8 marzo di ogni anno per ricordare sia le conquiste sociali, politiche ed economiche delle donne, sia le discriminazioni e le violenze cui esse sono ancora fatte oggetto in molte parti del mondo. L'8 Marzo è dunque una giornata di riflessione per tutti, ma anche il momento in cui ci si riunisce tra amiche e si fanno cene, chiaccherando insieme. Al di là di come ognuno di noi pensa e di valore a questa giornata, ricordiamoci che anche la gastronomia, ci regala alcuni preziosi ingredienti, per ricordarci il fiore simbolo di questo evento. La Mimosa. Il suo colore giallo vivo lo troviamo in tanti ingredienti, e, tante gustose ricette ( dal  aperitivo al dolce ) vi ho preparato nella sezione "I Menù di Nuxia e non solo" (Clicca sul titolo).  E, vuoi vedere che leggendo le ricette che ho scelto per voi, quest'anno niente cinema o ristorante, ma si cucina tutte insieme a casa Vostra?

UOVA MIMOSA

INGREDIENTI:
uova
maionese
tonno in scatola
acciughe
capperi dissalati


Preparazione:
Far bollire le uova.farle freddare e togliere il guscio,dopodiche taglierle a metà e togliere il tuorlo. Qualche tuorlo tenerlo da parte per la decorazione. A parte mixare ed amalgamare il tuorlo (tenerne da parte un pò per la decorazione finale)il tonno,la maionese,i capperi,l'acciuga.Riempire gli incavi delle uova con l'aiuto di un cucchiano.Il tuorlo avanzato metterlo in uno spremiaglio e schiacchiarlo sopra le uova stesse.

LASAGNE FRESCHE COLORATE

INGREDIENTI

250pasta fresca all'uovo per lasagne 
4 pomodori maturi
4 uova sode 
pesto alla genovese 
olio extravergine 
sale 
pepe


Preparazione:
Tagliate la pasta fresca a quadrati da lessare in abbondante acqua bollente salata. Scolate i pezzi di pasta con il ragno, allargateli su un canovaccio e lasciateli raffreddare (potete cuocere la pasta anche un paio d'ore prima). Riducete a rondelle i pomodori, metteteli in un piatto e lasciateli marinare conditi con sale, pepe e olio.  Tagliate a rondelle 2 uova sode, servendovi dell'apposito attrezzino. Montate le lasagne nei piatti individuali, disponendo in ognuno alcuni quadrati di pasta sovrapposti, alternati con le rondelle di pomodoro sgocciolate dalla marinata. Aggiungete la marinata al pesto in e mescolate. Poi aggiungete le fettine d'uovo, il tutto condito con la salsa di pesto. Servite i piatti con le lasagne, guarnite con briciole di uova sode (le 2 rimaste intere, tritate grossolanamente), un filo d'olio extravergine crudo, sale e pepe macinato.

MAGATELLO CON MIMOSA

INGREDIENTI
900magatello di vitello  
80tonno in scatola   
3 tuorli d’uovo sodo 
prezzemolo
salvia
rosmarino 
vino bianco secco 
un limone 
olio d’oliva
sale
pepe

Preparazione:
Scaldate nella pentola a pressione 2 cucchiaiate di olio con un rametto di salvia e uno di rosmarino. Rosolate la carne, rigirandola finché sarà colorita su ogni lato. Salatela, pepatela, quindi irroratela con mezzo bicchiere di vino bianco. Chiudete la pentola e cuocete per 20' da quando va sotto pressione; togliete quindi l’arrosto e lasciatelo raffreddare. Tagliatelo a fette sottili che disporrete su un piatto da portata, intercalandole con fettine di limone (per guarnizione). Cospargete con un tuorlo d’uovo sodo passato al setaccio. Servite accompagnando con una salsina preparata tritando insieme il tonno, i rimanenti tuorli, 6 cucchiaiate d’olio d’oliva, sale e pepe, quindi guarnite con prezzemolo.

ASPARAGI CON SALSA AL FORMAGGIO E "MIMOSA"

INGREDIENTI
1,5 Kg Asparagi   
un porro 
2 uova 
burro e parmigiano per la pirofila e per gratinare
sale 
Per la salsa al formaggio: 
300latte   
60g fontina valdostana  
15burro  
15g  farina bianca 
parmigiano grattugiato 
sale

Preparazione:
Mondate gli asparagi, privandoli della parte legnosa dei gambi. Lessateli quindi in poca acqua salata e scolateli ancora leggermente al dente. Ponete intanto a rassodare le uova,lasciandole cuocere per 10' esatti dall'inizio dell'ebollizione. Togliete da un porro non spuntato 6 foglie, scegliendole tra le più esterne, lunghe e verdi. Sbollentatele per mezzo minuto in acqua leggermente salata. Dividete gli asparagi,in 6 mazzetti uguali; legate ognuno con una striscia, ricavata da una foglia di porro. Pareggiate i mazzetti ai gambi, quindi disponeteli in una pirofila e, ancor meglio, in un piatto da forno che possa andare in tavola, debitamente imburrato. Preparate la salsa: impastate il burro con la farina; stemperate questo roux con il latte freddo versato a filo, quindi portate la salsa sul fuoco e fatela sobbollire per circa 10', infine aggiungete la fontina ridotta in cubetti, una cucchiaiata di parmigiano e un pizzico di sale. Accertatevi che il formaggio sia perfettamente sciolto, quindi togliete dal fuoco e salsate abbondantemente i mazzetti di asparagi, lasciando scoperte le punte. Condite anche con fiocchetti di burro e una cucchiaiata di parmigiano; passate al grill solo per il tempo necessario a gratinare la preparazione. Completate con la "mimosa", cioè cospargendo il tutto con le uova, sode, passate al setaccio. (Vi ricordiamo che per evitare che il guscio dell'uovo si rompa in cottura, alcuni suggeriscono di aggiungere un pizzico di sale nell'acqua in ebollizione)

TORTA MIMOSA

INGREDIENTI

Pan di Spagna: 
225zucchero 
225g farina  
6 uova 
una bustina di vanillina 
sale 
burro e farina per lo stampo
Per farcire e servire:
400panna fresca 
350 crema pasticciera 
Grand Marnier 
zucchero semolato
zucchero a velo

Preparazione:
Pan di Spagna: montate le uova con lo zucchero e un pizzico di sale ottenendo una spuma gonfia; incorporatevi delicatamente la farina e la vanillina, setacciandole. Trasferite l'impasto in uno stampo a cerniera (ø cm 28), imburrato e infarinato, poi infornatelo a 180 °C per 25-30'. Sformate la torta e lasciatela raffreddare su una gratella. Rifilatela a forma di calotta. Dividetela in tre dischi e spennellateli con il Grand Marnier. Unite alla crema g 200 di panna, montata; con essa farcite i due strati della torta ricomponendola. Spennellatela anche all'esterno con il liquore, spalmatevi sopra la crema rimanente e poi gli altri 200 g di panna, montata con g 20 di zucchero semolato. Cospargete la superficie con i ritagli di pan di Spagna, in finissime briciole, e passate la torta in frigo. Servitela con zucchero a velo
