Travelling ..... in cuisines all over the world!

Thanks to the great success in recent months , continues again this travell trip through the cuisines all over the world with many new recipes and places to visit. This week we travel with:

Garibaldis ( Mexico )

The Garibaldis , are some sweets in the shape of the hat. From the name it soon becomes clear that they are dedicated to Giuseppe Garibaldi. The Garibaldis are prepared in the original version , the molds mini cup cakes . and so resemble the shape of a hat , similar to that worn by Garibaldi in his battles . In pictures instead , I propose my version : A cylinder. Why ? Simply, because I had available at that time a mold for mini cup cakes and I wanted to suggest another way to prepare these delicious treats. You will need a rectangular mold and a round cookie cutter of 3.5 cm or 4 cm. So , we see at once how to prepare :

ingredients:

200 grams of sugar
5 eggs
3 1/ 2 cups flour
1 tablespoon baking powder for cakes
1/2 cup of liquid cream
3/4 cup apricot jam
1/4 of water
250 g of granulated sugar to cocoa (type code of chocolate)
397 g of condensed milk
300 g unsalted butter at room temperature

In a planetary mixing the sugar with the butter until creamy. Add the condensed milk always with planetary action . Then add the eggs one by one. Stir in the flour sifted with baking powder , alternating with the cream .
Put the mixture into the molds mini cup cakes previously buttered and floured and filling compound for 3 /4. If you do not have these molds using a rectangular mold of dimensions 20 cm x 30 cm approximately . Bake in the oven for 20 about 160 ° -170 ° C if you have used the molds mini cup cakes for 40 minutes if you used a rectangular mold . Remove the cupcakes ( or cake ) from the molds and leave to cool. If you have made ​​a unique cake with cookie cutter obtained many circles, the more it will be possible. In a saucepan, bring to heat the jam with the water until you get a creamy liquid , similar to honey. Remove from heat and pour the candy. Allow to cool . Pass the cookies are still warm in the grains . They should be served upside down or with the shorter part upwards. As if they were , in fact hats . If, however , you have created the circles manually after pouring the jam and still lukewarm , merge the two circles . One above the other . In order to obtain a cylinder. Grazie al grande successo riscosso in questi mesi, continua  il nostro viaggio attraverso la cucina di tutto il mondo con tante nuove ricette e posti da visitare. Questa settimana viaggiamo con:

I Garibaldis, sono dei dolcetti a forma di cappello. Dal nome si capisce subito che sono dedicati a Giuseppe Garibaldi. I Garibaldis vengono preparati nella versione originale, negli stampi da mini cup cakes. e ricordano così la forma di un cappello, simile a quello indossato da Garibaldi nelle sue battaglie. In foto invece, vi propongo la mia versione: A cilindro. Perchè? Semplicemente, perchè non avevo disponibile in quel momento uno stampo da mini cup cakes e volevo suggerirvi un altro modo per preparare questi deliziosi dolcetti. Vi occorrerà uno stampo rettangolare e un taglia biscotti tondo di 3,5 cm  o 4 cm. Dunque, vediamo subito come si preparano:

Ingredienti:

200 gr di zucchero
5 uova
3 1/2 tazze di farina
1 cucchiaio di lievito in polvere per dolci
1/2 tazza di panna fresca liquida
3/4 di tazza di marmellata di albicocche
1/4 di acqua
250 g di granella di zucchero al cacao ( tipo code di cioccolato )
397 g di latte condensato
300 g di burro non salato a temperatura ambiente

In una planetaria mixare lo zucchero con il burro, fino ad ottenere una crema. Aggiungere il latte condensato sempre con la planetaria in azione. Poi aggiungere le uova uno ad uno. Incorporare la farina setacciata con il lievito in polvere, alternando con la panna liquida.
Mettere il composto negli stampi da mini cup cakes  precedentemente imburrati e infarinati e riempire di composto per  3/4. Se non disponete di questi stampi utilizzare uno stampo rettangolare delle dimensioni di 20 cm x 30 cm circa. Cuocere in forno per 20 circa 160° -170° C se avete utilizzato degli stampi da mini cup cakes, per 40 minuti se avete utilizzato uno stampo rettangolare. Togliere le tortine (o la torta ) dagli stampi e lasciare raffreddare. Se avete fatto una unica torta, con il taglia biscotti ricavate tanti cerchi , quanto più ne sarà possibile. In un pentolino mettere a scaldare la marmellata con l'acqua fino ad ottenere una crema liquida, simile al miele. Togliere dal fuoco e versare sui dolcetti. Lasciare intiepidire. Passare i dolcetti ancora caldi nella granella.  Vanno serviti capovolti ovvero con la parte più corta verso l'alto. Come se fossero, appunto dei cappelli. Se invece, avete creato i cerchi manualmente, una volta colata la marmellata e ancora appena tiepidi, accorpare i cerchi a due. Uno sopra l'altro. In modo da ottenere un cilindro. Poi terminare la decorazione con la granella di zucchero al cacao.

I Consigli di Nuxia:
Se non avete i misuratori delle tazze, potete utilizzare un misurino dei millilitri, considerando che 250 ml corrispondono ad una 1 tazza.  ( Es. 1/2 tazza = 125 ml, eccetera. ) Misurare quindi, tutti gli ingredienti che siano liquidi o solidi, con le misure indicate in ml.
Attenzione: non misurare mai in grammi!
