This delicious recipe is great to recycle advanced ingredients such as bread, white or not. This version, which I present in the photo was made with corn bread to 5 and I must say that the taste of these meatballs was really excellent contact with the palate. Furthermore, this mixture is very well suited to run a meatloaf in the oven. In short, the ingredients with a little imagination you can easily transform into different dishes, with the same taste. Ingredients
1/2 kg of mixed minced meat (beef, pork, turkey)
100g bacon IGP Sudtirol
1 egg
200g stale white bread, or bread to 5 grains
little milk, partially skimmed raw, for bread
Nutmeg powder to taste
chopped parsley to taste
extra virgin olive oil for frying
salt
black pepper


Cut the bacon into small pieces.
Soak the bread in the milk and let soak for a minute. Wring out the bread, milk. Transfer the bread in a bowl along with bacon and meat. Add all other ingredients and knead the mixture. The dough should be firm and pliable. If it is too soft and difficult to work add more bread soaked in milk and then squeezed. Season with salt and pepper. Take little food with your hands slightly moistened with water and make a little round ball. Then with the palm of your hand lightly crushed its surface to flatten a bit. Now you have got a meatball. Continue this process to create other polpetette one until all the dough. The first European monarch to use the PDO bread, to Altamura is produced with durum wheat semolina from the municipalities of Altamura, Gravina di Puglia, Poggiorsini, Spinazzola and Minervo Murge. Questa deliziosa ricetta è ottima per riciclare gli ingredienti avanzati come ad esempio il pane raffermo, bianco oppure no. Questa versione che vi presento nella foto è stata eseguita con pane ai 5 cereale e devo dire che il gusto di queste polpette è stato veramente eccellente al contatto con il palato. Inoltre, questo impasto si presta benissimo per eseguire un polpettone al forno. Insomma, ingredienti che con un pò di fantasia si trasformano facilmente in diversi piatti, di uguale gusto. Lascio a voi decidere come gustarli: polpette o polpettone? 


Ingredienti 
1/2 Kg di Carne macinata mista (Manzo,maiale, tacchino)
100g di speck Igp Sudtirol 
1 uovo 
200g di pane bianco raffermo oppure pane ai 5 cereali
poco latte parzialmente scremato crudo, per il pane
Noce moscata in polvere quanto basta
prezzemolo tritato quanto basta
olio extravergine di oliva per friggere
sale
pepe nero


Tagliare lo speck in piccoli pezzetti.
Bagnare il pane con del latte e lasciate ammollare per un minuto. Strizzare bene il pane, dal latte. Trasferite il pane in una ciotola, insieme allo speck e alla carne. Aggiungere tutti gli altri ingredienti e impastare il composto. L'impasto dovrà essere sodo e malleabile. In caso sia troppo morbido e difficile da lavorare aggiungete ancora del pane ammollato nel latte e poi strizzato. Aggiustare di sale e pepe. Prelevare poco in pasto con le mani inumidite leggermente di acqua e fate una piccola sfera tonda. Poi con il palmo della mano schiacciate leggermente la sua superficie per appiattire un pò. Avrete così ottenuto una polpetta. Continuare con questo procedimento per creare altre polpetette fino ad esaurire tutto l'impasto. Importante cercare di fare le polpette tutte della stessa dimensione, ovvero come una pallina da golf.Scaldare l'olio in una padella, quando esso sarà pronto friggere le polpettte, poi lasciare scolare su carta assorbente per eliminare l'eccesso d'olio e infine, servire le polpette calde o tiepide. Allo stesso modo potrete preparate preparare un polpettone, che dovrà essere passato prima qualche minuto in una padella con dell'olio bollente e poi in forno a 200° fino a completa doratura della crosta, e bagnando durante la cottura, con poco brodo vegetale.

ABBINAMENTO:

assai saporito, può essere gustato da solo oppure in abbinamento con formaggi e salumi. Il vino si abbina al cibo che accompagna.
Primo pane europeo a fregiarsi della DOP, quello di Altamura è prodotto con semola rimacinata di grano duro proveniente dai comuni di Altamura, Gravina di Puglia, Poggiorsini, Spinazzola e Minervo Murge. La lievitazione avviene utilizzando una porzione di impasto della panificazione precedente che prende il nome di lievito naturale o lievito madre. Tradizionalmente il pane veniva impastato nelle case, quindi formato e cotto al forno pubblico; il fornaio apponeva un apposito marchio alle forme per poterle consegnare, una volta cotte, ai legittimi proprietari. Attualmente il Pane di Altamura si commercializza in pagnotte di peso non inferiore a 500 grammi, in due forme: una “alta e accavallata”, l’altra “a cappello di prete”, come da descrizione del disciplinare. Ha crosta spessa, non inferiore a 3 millimetri; la mollica è alveolata e paglierina, morbida e profumata di grano; possiede buona consistenza ed è delicatamente sapido. È un pane che, per le sue caratteristiche, si conserva per molti giorni.

 For about 20 canapés:


Ingredients:
3 to 4 large slices of bread to 5 grains
200g of soft cheese
80g Speck IGP of  Sudtirol
1 heaping tablespoon of organic honey chestnut

fresh chives

Questi deliziosi canapè li ho creati circa due anni fa, quando una mia amica, vista la mia passione per la cucina mi regalò delle farine per pani elaborati, tra cui vi era anche quella per il pane ai 5 cereali. Pensai quindi che un pane così buono doveva essere un pane da farcitura da accompagnamento. Apri la mia dispensa e con quel che c'era nacquero questi buonissimi canapè alle delizie di montagna, ovvero dei gustosi stuzzichini, ottimi da servire come antipasto, ma perfetti anche per un aperitivo/party o da servire ad un pranzo/cena importante. Per quest'ultima occasione, vi consiglio di pennellare la superficie  della fettina di speck, con della gelatina di carne preparata in casa per l'occasione e di terminare poi con il ciuffo crema allo stracchino insieme a qualche filo di erba cipollina per la decorazione. Oltre ad diventare un piatto di grande impatto visivo, regalano a questi canapè, un gusto deciso, ma nello stesso tempo raffinato. Nella foto vi faccio vedere la versione "veloce" senza questi due ultimi ingredienti, ossia, quella da servire ad una tavola informale. Ecco la ricetta:




 Per 20 canapè circa:


Ingredienti:
3 - 4 fette grandi di pane ai 5 cereali
200g di stracchino 
80g di Speck IGP del Sudtirol
1 cucchiaino colmo di miele biologico di castagno
1 pizzico di pepe nero
1 pizzico di noce moscata
gelatina liquida di carne ( facoltativo )
erba cipollina fresca




Togliere la crosta alle fette di pane. Tagliare le fette di pane in quadrati di 3 - 3,5 cm per lato. (Oppure utilizzare degli stampini con forma a piacere.) Tagliare le fettine di speck della stessa dimensione del pane.
In un mixer inserire lo stracchino, il miele, il pizzico di  pepe e di noce moscata. Azionare l'apparecchio e fino a trasformare gli ingredienti in una morbida crema. Spegnere. Spalmare le fettine di pane con uno strato sottile con la crema allo stacchino, appoggiare le fettine si speck sopra di essa. trasferite  la crema rimasta in una sac- à - poche con beccuccio a stella. Se voi preferite spennellare la superficie dello speck con della gelatina liquida di carne, già pronta per l'uso, poi decorare con un ciuffo di crema sul centro dei canapè. In fine a piacere decorate con qualche filo di erba cipollina. Tenere in frigo fino a 5- 10 minuti, prima di servire.

ABBINAMENTO:

da gustare al naturale con il pane o utilizzato come ingrediente in zuppe e uova, si abbina a vini bianchi di buon corpo e aromatici o rossi leggeri e fruttati.
Lo Speck dell’Alto Adige marchio Südtiroler è un prodotto IGP confezionato unicamente nella provincia di Bolzano, in particolare nella Val Venosta, tra Merano e il confine svizzero. Benché il termine in tedesco significhi “lardo”, per la sua produzione si utilizzano solo cosce di prima scelta che vengono disossate e divise in tranci, poi rifilati eliminando il grasso e la cotenna eccedenti. Ciascun pezzo, o baffa, deve presentare una distribuzione uniforme di parti magre e grasse. Le baffe vengono quindi sottoposte a salagione, aromatizzate con aglio, ginepro, pepe nero e, dopo circa tre settimane, avviate all’affumicatura. Appese a telai di ferro sotto larghi camini alimentati con trucioli di acero e di faggio, subiscono un’affumicatura a freddo, con temperatura non superiore ai 20 °C. Segue la stagionatura di almeno 22 settimane. Una volta pronto, lo Speck dell’Alto Adige deve pesare almeno 3,7 chilogrammi. Al momento dell’acquisto occorre verificare che la cotenna non sia in eccesso e la parte grassa non prevalga su quella magra, di colore rosato tendente al rosso. Al tatto presenta consistenza soda; il sapore è giustamente equilibrato tra la componente salina e l’affumicatura, dolce e con sentore di carne.


IN CUCINA


Da provare con pane bianco o di segale e burro, si può abbinare anche a cetrioli agrodolci di produzione locale. Tagliato a dadi diventa un ingrediente delle zuppe d’orzo. Si può inoltre sostituire al bacon nella preparazione delle uova al burro.

Ingredients

4 Fuji apples

The ciabatta bread is a delicious bread. It tastes very different than the traditional bread. And 'bread is soft down, and easy to prepare. Ingredients for 12 people:

Prepare lievitino: Put the yeast in a bowl, add 2 tablespoons of warm water and slowly add the flour. Stir until a smooth paste. Allow to stand for 5 minutes, so as to leave inflate the dough. Then again stir vigorously for a few minutes. Cover with a cloth towel and let stand at room temperature at least for one night (12 - 24 hours).
