Scallops with mushrooms

Scallops with mushrooms
(This recipe is Nuxia)

The scallops with mushrooms are a very easy and tasty dish. It can be run either as a main dish every day is to accompany an elaborate menu.  

Ingredients for 4 people:
400g of mushrooms already cleaned and chopped
1/2 glass of Malvasia
4 slices of chicken slices Fileni* or Amadori  *
flour as needed
1 knob of butter
extra virgin olive oil
Salt and pepper

Pound the slices of chicken, lightly dust with flour and brown in oil and butter with a pinch of salt and pepper.
Add the wine and let evaporate. Add mushrooms and sprinkle with 1/2 glass ofwater. Bake for 15 minutes over low heat and cover the pan. Adjust salt andpepper. Dry the gravy to taste and serve.

The Malvasia Bianca di Candia aromatic, with flavors of Muscat, a white wineoriginates also popular outside the production area. For this feature the vine wasonce called "Malvasia to Moscato flavor" in 1818 was cited as the "Malvasiagrapes from very sparse." Nell'Alessandrino was widespread enough to be also called "Malvasia of Alexandria." Today it is significantly present in the provinces of Piacenza and Parma. The Malvasia of Colli di Parma DOC is obtained from the vine (minimum 85%), possibly supplemented by Moscato Bianco grape(maximum 15%). It is produced in versions dry, sweet and sparkling wine
