BASI PER TORTE DI COMPLEANNO -BASES FOR BIRTHDAY CAKES

Prima di leggere il “tema della settimana”, vi consiglio di leggere il mio editoriale che trovate in alto nella cartelletta fuxia.
Se avete finito di leggere l’editoriale, vi verrà sicuramente da dire : “ Non ci avevo mai pensato prima!”
Bene. Chiusa questa parentesi, inizierò con dirvi che questa settimana ci occuperemo delle tecniche di base  della pasticceria.
Per preparare una buonissima torta ci vorrà sicuramente una ottima base. Iniziamo!



Tema della settimana:

“Basi per torte di Compleanno”


In Italia, una classica base per torte è sicuramente il Pan di Spagna dalla struttura soffice. Altra base validissima, è la Pasta Genovese, la quale ha uno strettissimo legame di parentela con il Pan di spagna. In seguito spiegheremo il motivo. In America oltre al classico Pan di spagna preparato dagli Italiani, esiste un altro tipo di  base per torte. Esso viene comunemente chiamato Pan di spagna,  ma  in realtà cambia negli ingredienti; poiché delle uova, si prevede solo l’utilizzo degli albumi. Questa base, è la stessa base della comune torta americana “ Angel Cake”.  Inoltre, da qualche tempo, giunta anche da noi in Italia, l’altra base per  torte,  che in una pasticceria  Americana non può mancare è la “base al riso soffiato” detta “Marshmallow Crispy Squares” .
Ma adesso, iniziamo ad analizzare e soffermaci sulle varie “basi per torte di compleanno”.

- Il  Pan di Spagna:

Non tutti sanno che le origini del Pan di Spagna, vengono attribuite ad un cuoco italiano. Precisamente a un cuoco di Genova, il quale verso la metà del 1700 il quale venne portato in Spagna da un marchese, nonché Ambasciatore Italiano, alla corta Spagnola. Questa torta, in origine conosciuta con il nome di  Patè Genoise, cambiò nome quando il cuoco genovese,  preparò al banchetto della corte, quel dolce straordinario. Una  torta dolce e sofficissima, che conquistò tutti i palati degli invitati a Corte. In onore alla Spagna, il cuoco cambiò il nome al dolce e lo chiamò Pan di Spagna. Inoltre l’impasto veniva preparato con versando l’acqua bollente in una pentola e sopra di questa veniva appoggiata un’altra, con all’interno gli ingredienti da mescolare. Metodo che poi fu abbandonato.
Questo è quanto si racconta. Tutti sappiamo però che una base per torte con il nome di Pasta Genovese esiste ancora oggi.

- La Pasta Genoise:

Essa è molto simile al Pan di spagna, ma che si differenzia  per la presenza tra gli ingredienti, del burro in una piccola quantità oltre per il leggero diverso peso degli ingredienti. Ancora oggi gli ingredienti vengono mescolati a caldo.
Per quanto riguarda il Pan di Spagna, io vi posso dire che la tecnica di “mescolare a caldo” è stata abbandonata per l’introduzione dei “mescolatori elettrici” per intenderci, i quali con la loro velocità riescono a far inglobare più aria all’impasto in pochissimo tempo. Sarà infatti l’aria a dare la sofficità finale al dolce; però vi posso garantire che se scaldate appena l’impasto prima di essere mescolato, il vostro Pan di Spagna sarà super soffice!
Altro mito da sfatare l’uso del lievito chimico, bicarbonato e cremortartaro.
Il vero Pan di Spagna e la vera Pasta Genoise , se non richiedo l’uso  di agenti chimici.


- Il Pan di Spagna Americano:

Come vi dicevo, ha gli stessi ingredienti del Pan di Spagna, ma viene fatto solo con gli albumi. Questo perché gli americani farciscono le loro torte con creme al burro e quindi per dare leggerezza al dolce preferiscono che il Pan di Spagna venga fatto senza tuorli.


-  Marshmallow Crispy Squares  ( Base al riso soffiato ) :

Questo viene fatto con caramelle Marshmallow fatte sciogliere con del burro e poi si aggiunge il riso soffiato. Non si prevede cottura in forno come invece avviene per gli altri impasti.
Una volta preparato questo si indurisce, e prende la forma del contenitore dove lo si lascia solidificare. La sua solidificazione avviene al fresco, possibilmente in frigorifero.
Poi con un coltello si taglia e si modella come se si trattasse di una scultura. Serve come base per torte tridimensionali di cui tratteremo più in avanti.

Pan di spagna


250 g. di uova
175 g. di zucchero semolato
200 g. di farina 
vaniglia oppure buccia di limone per aromatizzare
burro e farina per la teglia

Preriscaldare il forno a 170 gradi.

Versare le uova e lo zucchero in una ciotola di acciaio inox da inserire dentro un pentola piena di acqua calda per permettere la cottura a bagnomaria. Mettere il tutto sul fuoco basso e iniziate a sbattere con una frusta fino a quando il composto raggiungerà la temperatura di 40 gradi, misurare con un termometro da cucina.
Togliere dal fuoco l’impasto e con mixer, montare l’impasto fino ad ottenere un composto molto gonfio e sodo, per 15 minuti.
Setacciare in una ciotola la farina e unire l’aroma a vostro piacere.
Versare la polvere ( farina e aroma) a pioggia sul l’impasto, poco alla volta. Con una spatola girare dall’alto verso il basso, fino ad unire tutta la  polvere.
Imburrare ed infarinare la teglia possibilmente  a cerniera. Versare delicatamente il composto dentro la teglia.
Cuocere nel forno caldo a 170 gradi  per circa mezz’ ora; poi lasciare riposare il pan di spagna nel forno spento con lo sportello aperto per 5 minuti. Toglietelo dalla teglia e fatelo raffreddare su una gratella.



Base per torte al riso soffiato                                                 

Ingredienti:


3 cucchiai burro o margarina


200 grammi di caramelle Marshmallows bianche


6 tazze di cereali di riso soffiato


Fate sciogliere il burro in una pentola antiaderente a fuoco basso. Aggiungere le caramelle marshmallow, cuocere fino a quando sono si completamente sciolte, mescolando continuamente. 



Togliere dal fuoco.

Aggiungere i cereali, mescolare bene.


Ungere il fondo della di una teglia 20 x 40 cm spruzzati con burro fuso o olio di semi di girasole.  



Versare l'impasto e stenderlo livellandolo con un cucchiaio. Raffreddare completamente.

Suggerimenti:
Preparate l'impasto al Microonde:
Mettere il Burro in grande ciotola alta per  microonde, scaldate per circe  45 sec. o fino a quando diventa fuso. Togliete la ciotola dal forno. Aggiungete le caramelle marshmallow, e mescolate a mano il tutto con un cucchiaio. Mettete il composto nel Microonde per  1-1/2 min.  fino a quando le caramelle marshmallows su sono completamente sciolte. Con un cucchiaio amalgamare  bene, mescolando per 45 sec. Continuare la ricetta  come indicato sopra.




Pasta Genoise  ( Patè Genoise)


Ingredienti:


4 uova
140 grammi di zucchero
140 grammi di farina
40 grammi di burro liquido.


Inoltre burro e farina per ungere lo stampo. Procedere con gli ingredienti liquidi per il bagnomaria. Continuare la ricetta con lo stesso procedimento usato per il pan di spagna.










Pan di spagna Americano




Ingredienti:                                                            


360 g di albume

200 g di zucchero semolato


5 g di cremor tartaro


150 g di farina 


150 g di zucchero semolato


2 g di scorza di limone


2 g di sale

1 bustina di Vanillina 





Utilizzare lo stesso procedimento della ricetta "pasta Genoise" e seguire poi con quella descritta per il pan di spagna.

-The sponge cake:

Sponge Cake:


Ingredients:


250 g. of eggs
175 g. granulated sugar
200 g. flour
Vanilla or Lemon peel to flavor
Butter and flour for pan

Preheat the oven to 170 degrees.Pour the eggs and sugar in a bowl of stainless steel to be inserted into a pot of hot water in a water bath to allow the cooking. Put it on low heat and started to beat with a whisk until the mixture reaches a temperature of 40 degrees, measured with a thermometer cooking.Remove from the heat and the dough mixer, attach the dough until the mixture is very swollen and firm, for 15 minutes.Sift the flour into a bowl and add flavor to your liking.Pour the powder (flour and flavor) to rain on the dough, a little at a time. With a spatula turn from top to bottom, to join up all the dust.Butter and flour the pan possibly hinge. Gently pour the mixture into the pan.Bake in preheated oven at 170 degrees for about half an 'hour, then let stand the sponge off in the oven with the door open for 5 minutes. Remove it from the pan and let cool on a wire rack.







             Marshmallow Crispy Squares       


 What You Need


3 Tbsp. butter or margarine

1 pkg.  (10-1/2 oz.) JET-PUFFED Miniature Marshmallows

6 cups crisp rice cereal

Make It


MELT butter in large saucepan on low heat. Add marshmallows; cook until marshmallows are completely melted and mixture is well blended, stirring constantly. Remove from heat.
ADD cereal; mix well.
PRESS onto bottom of 13x9-inch pan sprayed with cooking spray. Cool completely.

Size-Wise
Sweets can add enjoyment to a balanced diet, but choose an appropriate portion.
Use Your Microwave
Microwave butter in large microwaveable bowl on HIGH 45 sec. or until melted. Add marshmallows; toss to coat. Microwave 1-1/2 min. or until marshmallows are completely melted and mixture is well blended, stirring after 45 sec. Continue as directed.
Substitute
Prepare using 1 pkg. (10 oz.) regular JET-PUFFED Marshmallows.








Pasta Genoise (Pate Genoise)             
              


Ingredients:


4 eggs140 grams of sugar
140 grams of flour
40 grams of liquid butter.


In addition to butter and flour muffin pan. 
Proceed with the liquid ingredients to the water bath. Continue the recipe with the same procedure used for the sponge.






American Sponge Cake                                            


Ingredients:


360 grams of egg white
200 grams of caster sugar
5 grams  of baking
150 grams of flour
150 grams of caster sugar
2 grams of lemon peel
2 grams of salt
1 sachet of Vanillin


Use the same procedure of the recipe "pasta Genoise", and then follow with that described for the" sponge cake".
