Il Budino peruviano al caramello è  un dolce tipico della regione del nord  del Perù: Piura. La regione 
Piura, oltre ad essere conosciuta in tutto il mondo per le sue delicate ceramiche decorate in oro, è molto famosa per un dolce, molto particolare: Un budino al sapore di caramello. I suoi ingredienti semplici lo rendono unico nel suo sapore. Tradizionalmente, costituito da latte di capra, bestiame molto diffuso nelle regione del Perù, farina di riso, e Chancaca. La chancaca, non è altro che la melassa, ottenuta dallo zucchero di canna. In questa mia versione, il latte di capra è stato sostituito dal latte di mucca; mentre la chancaca, dal zucchero di canna  Demerara. E' un dolce straordinario, leggero, ma nutriente; per la presenza tra gli altri ingredienti, anche delle noci. Adatto sia in Estate che in Inverno, è un delizioso dolce che può essere destinato sia alla merenda dei bambini che per dessert da fine pasto.

Ingredienti per 6 persone:

1 litro di latte intero
100g di farina di riso fine
100g di zucchero di canna tipo Demerara
1/2 bicchiere di acqua
1 baccello di vaniglia intero
100g di noci tritate
mezze noci intere per decorare

In una pentola antiaderente (o di acciaio dal fondo spesso), inserire lo zucchero di  canna, insieme all'acqua. Mettere sul fuoco e mescolare continuamente, fino ad ottenere un caramello liquido. Spegnere il fuoco. in un'altra pentola, amalgamare poca farina per volta insieme al latte, per evitare la formazione di grumi. Mettere sul fuoco e aggiungere poco alla volta lo zucchero liquido, sempre mescolando. Aggiungere il baccello della vaniglia intera. Sempre mescolando portare a bollore, fino ad ottenere una crema densa. Spegnere il fuoco e aggiungere subito le noci tritate e mescolare velocemente. Lasciare appena intiepidire, e trasferire in coppe individuale questo dolce. Decorare con le mezze noci e zucchero di canna. Il budino ancora caldo farà sciogliere lo zucchero di canna facendolo diventare liquido.Trasferire in frigo per almeno due ore, prima di servire. Se desiderate un budino più sodo aumentate le dosi della farina di riso a 160g, inoltre,  lo zucchero di canna può essere omesso dalla decorazione, oppure, può essere aggiunto sul dolce, qualche minuto prima di servire.

These croquettes with ham, is the national drink of Cuba are needed especially for alcoholic drinks accompanied by the famous happy hours with music, which are held in the evening, the beautiful beaches of the place. But, these croquettes with ham, can be a great starter and second, if accompanied by seasonal vegetables. In addition, you can omit the sherry, the ingredients, and these nuggets make a meal fit for children. It is the same for the fried onion, who does not like, may well omit it from the ingredients. I have tried: And the taste is extraordinary in all cases, even omitting both ingredients.


Ingredients:

200g of cooked ham, cut into slices
200g of white sauce (ready)
200g breadcrumbs
100g plain flour
1/4 onion, chopped
1 tablespoon chopped parsley
1 tablespoon dry sherry (optional)
1/2 teaspoon ground black pepper
1/4 teaspoon ground nutmeg
2 eggs
sunflower oil or corn oil for frying
1 fresh lime or 1 lemon
salt to taste

Chop the ham into small pieces. In a skillet brown the chopped onion and then drain the oil. In a bowl, prepare the filling. Mix ham, bechamel sauce, parsley, onion browned, black pepper, nutmeg, salt and sherry finally secco.Amalgamare well, seal the container with plastic wrap and refrigerate. Allow to cool for 30 to 45 minutes. In two separate containers to put in a flour and bread crumbs in the other. In another bowl whisk with a fork, two eggs with a pinch of salt. Separately, fill a bowl of water. Remove the stuffing of kibble from frigo.Bagnare hands in the bowl of water. Spoon withdraw a small amount of the compound then, transfer it between your hands and quickly give the elongated shape of the kibble. Pass the croquette first in flour, then nell'uova previously beaten, and finally in breadcrumbs. Lay the croquettes in a clean dish that will serve as a container for subsequent croquettes. Continue to make croquettes, until all of the compound, occasionally remembering to moisten your hands in water so that mixture does not stick between your hands. then let rest in refrigerator for 30 minutes. In a skillet over high, heat the oil, when it come to a boil add the croquettes and fry them until golden. Transfer the cooked croquettes are paper towels to drain excess oil from frying them. Then transfer to a serving platter with wedges of lime or lemon. Serve the croquettes hot or warm, sprinkled with lime juice or lemon.

Note: If you do not like the onion and / or sherry can omit these two ingredients, and I assure you, that the success of the dish will still be guaranteed, as well as more lightweight and suitable for children.

Croquetas de jamón (Cuba)

Queste crocchette al prosciutto cotto, sono l'aperitivo nazionale di Cuba. Servono sopratutto, per accompagnate bibite alcoliche, per i famosi happy hours a ritmo di musica, che si tengono la sera, nelle splendide spiagge del luogo. Ma, queste crocchette al prosciutto, possono diventare un ottimo antipasto e secondo, se accompagnate da verdura di stagione. Inoltre, potete omettere lo sherry, tra gli ingredienti, e far diventare queste crocchette un pasto adatto ai bambini. Vale la stessa cosa per la cipolla fritta, a chi non piace, può benissimo ometterla dagli ingredienti. Io ho provato: E il gusto rimane straordinario in tutti i casi, anche omettendo entrambi gli ingredienti.


Ingredienti:

200g di prosciutto cotto tagliato a fette
200g di besciamella ( già pronta )
200g di pangrattato
100g di farina bianca
1/4 di cipolla tritata
1 cucchiaio di prezzemolo tritato
1 cucchiaio di sherry secco (facoltativo)
1/2 cucchiaino di pepe nero macinato
1/4 cucchiaino di noce moscata macinata
2 uova
olio di girasole o di mais per friggere
1 lime fresco o 1 limone
sale quanto basta

Tritare il prosciutto cotto a pezzettini. In una padella rosolare la cipolla tritata e poi scolarla dall'olio.In una ciotola preparate il ripieno. Mescolare il prosciutto, la besciamella, il prezzemolo, la cipolla rosolata, il pepe nero, noce moscata il sale e infine lo sherry secco.Amalgamare bene il tutto, chiudere il contenitore con pellicola trasparente e mettere in frigo. Lasciare refrigerare dai 30 ai 45 minuti. In due contenitori separati mettere in uno la farina e nell'altro il pangrattato. In un'altra ciotola sbattere con una forchetta, due uova con un pizzico di sale. A parte, riempire una ciotola d'acqua. Togliere il ripieno delle crocchette dal frigo.Bagnare le mani nella ciotola d'acqua.Con un cucchiaio prelevare una piccola quantità di composto poi, trasferirlo fra le mani e dare velocemente la forma allungata delle crocchette. Passare la crocchetta prima nella farina, poi nell'uova precedentemente sbattute, e infine nel pangrattato. Adagiare la crocchetta in un piatto pulito che vi servirà da contenitore anche per le successive crocchette. Continuare a fare le crocchette, fino ad esaurire tutto il composto, ricordandosi ogni tanto di inumidire le mani nell'acqua, in modo che in composto non si attacchi fra le vostre mani. lasciare poi riposare in frigorifero per 30 minuti. In una padella a  fondo alto, scaldare l'olio, quando esso giungerà a bollore inserire le crocchette e farle friggere fino a completa doratura. Trasferire le crocchette cotte si carta da cucina per far scolare l'olio della frittura in eccesso da esse. Poi trasferirle in un piatto da portata insieme a degli spicchi di lime o limone. Servire le crocchette calde o tiepide, cosparse con del succo di lime o limone.

The Brigaideiros are typical Brazilian sweets. They are in fact comparable to the bon-bons. The brigadeiros, however, can have multiple ripeni, caramel, chocolate, cappuccino, etc. from the fruit. So I'm really a must Brazilian cuisine. This version that I present are filled with coffee and nuts, local ingredients that are not lacking in lecture notes of Brazilian cuisine.


ingredients:
170g sweetened condensed milk
1 tablespoon instant coffee, decaffeinated coffee Hag* (already dissolved in water)
1/2 tablespoon of softened butter,
100g of finely chopped walnuts
About 50g of cocoa powder
butter to grease your hands


In a pan with high sides, pour the condensed milk, coffee and butter. Heat everything over low heat, stirring constantly, and making sure the mixture does not stick to the pan for about 5 minutes max. Remove from the heat and add the walnuts. Mix and put everything on a plate to cool just greased with butter. With your hands greased with butter, create and move the balls in cocoa. Let cool in refrigerator until ready to serve. If you want you can decorate with brigadeiros of roasted coffee beans.
