I Brigaideiros sono dei dolcetti  tipici  del Brasile. Essi in realtà, sono paragonabili ai bon-bons. I brigadeiros, però, possono avere svariati ripeni, dal caramello, al cioccolato; dalla frutta al cappuccino eccetera. Insomma sono davvero un must della cucina brasiliana. Questa versione che vi presento, sono ripieni con caffè e noci, ingredienti tipici che non possono mancare nelle dispense delle cucine brasiliane. 

Ingredienti: 
170g di latte concentrato zuccherato
1 cucchiaio di caffè solubile decaffeinato Hag* (già disciolto nell'acqua)
1/2 cucchiaio di burro ammorbidito,
100g di noci tritate finemente
50g circa di cacao amaro in polvere 
burro per ungere le mani

In una pentola con i bordi alti, versare il latte concentrato, il caffè e il burro. Scaldare il tutto a fuoco basso, mescolando sempre, e facendo attenzione che che il composto non si attacchi alla pentola, per circa 5 minuti max. Togliere da l fuoco e aggiungere le noci. Mescolare e mettere il tutto a raffreddare in un piatto appena unto di burro. Con le mani Unte di burro, creare delle sfere e passare nel cacao. Lasciare raffreddare in frigo, fino al momento di servire. Se volete potete decorare i Brigadeiros con dei chicchi di caffè tostato.

The tagine is a Moroccan dish. It can be prepared with lamb, chicken, or beef. It takes its name from the typical pot where the meat is cooked, just Tajine. This crock pot is very special. Has a broad and flat shape, similar to a pan, while the cover, is elongated shape similar to a funnel. His cover as well as being aesthetically, has a very particular function in mind: When cooking the meat, allowing the aromas given off on the meat, without getting lost, in the ambient air, by becoming the final dish, very tasty and aromatic. Besides being a crock, and having to get to the meat be cooked very long, prevents any of the flesh burns due to heat. The recipe that I have presented is just one of many ways to prepare chicken tagine, which can be prepared, even as other parts of the chicken thighs, wings, etc.. I I preferred the breast without skin, why not release a lot of fat during cooking, but we can prepare it to suit your tastes and needs. If you do not have the proper tagine pot, do not despair: it goes very well with a steel pan bottom frequently, or use a crock pot that keeps the meat stick to the bottom. Important: remember, however, to stir the food occasionally. in the case of the pot tajine, the dish is not to be mixed.


Ingredients:
500g chicken breast "Fileni" * or "10 plus chicken" Amadori *
3 tablespoons extra virgin olive oil
1/2 onion, finely chopped
2 tablespoons cumin seeds
1/2 teaspoon turmeric
400g of tomato sauce "the Sovereign" Cirio or "The Soup" Valfrutta *
1 whole cinnamon stick (for a pinch of cinnamon powder)
A small grating of fresh ginger root
1 tablespoon chopped fresh parsley or dried
1 tablespoon chopped cilantro (optional)
1/2 teaspoon extra-fine granulated sugar
a pinch of salt


Cut the chicken breast into cubes.
In a pan add oil and cumin seeds. Heat oil, fry without it (the hot oil will serve to give off the aroma of cumin seed). Turn off. Drain the oil from the seeds of cumin, a strainer with fine meshes. Collect the oil in a bowl and pour in a thick-bottomed pan or better still in the traditional tajine pot, if you have it
(The caraway seeds collected in the sieve should be discarded because it no longer needed). Heat oil and add the chopped onion, grated ginger, turmeric, and (possibly, also the chopped cilantro) and diced chicken. Brown just chicken. Add the tomato sauce, sugar, parsley, salt to taste. Mix. Add, 2 - glasses of water. Mix again. Insert a stick of cinnamon or a pinch of cinnamon powder. Close the pot with the lid and cook over medium-low for at least half an hour or until sauce is reduced completely. Important: mix from time to time, if you use a steel pan, the sauce because it may stick to the pan and burn. When the sauce is completely reduced, turn off the heat and eventually remove the cinnamon stick. Serve the dish hot or warm. Accompanied with bread, preferably Moroccan type.

Tajine di pollo in salsa di pomodoro aromatica

Il Tajine è un piatto tipico Marocchino. Può essere preparato con dell'agnello, pollo, o manzo. Prende il nome dalla pentola tipica in cui viene cotta la carne, appunto Tajine. Questa pentola di coccio, è molto particolare. Ha una forma larga e piatta, simile ad una padella, mentre il coperchio, è  a forma allungata simile ad un imbuto. Il suo coperchio oltre ad essere esteticamente, molto particolare ha una funzione ben precisa: Durante la cottura della carne, permette agli aromi di  sprigionarsi sulla carne, senza disperdersi, nell'aria e nell'ambiente, facendo divenire la pietanza finale, molto gustosa e aromatica. Inoltre essendo di coccio, e dovendo far avere alla carne una cottura molto lunga, previene le eventuali bruciature della carne dovuta al calore. La ricetta che vi ho presentato è solo uno dei tanti modi di preparare il tajine di pollo, quale può essere preparato, anche con altri parti del pollo come cosce, ali, ecc. Io Ho preferito il petto senza pelle, perchè non rilascia molto grasso durante la cottura, ma ognuno può prepararlo secondo i propri gusti e le proprie esigenze. Se non avete l'apposita pentola da Tajine, non disperate: va benissimo una pentola di acciaio con fondo molto spesso, oppure, utilizzare una pentola di coccio, che evita che la carne attacchi sul fondo. Importante: ricordarvi però, di mescolare ogni tanto la pietanza. nel caso della pentola tajine, la pietanza non va mescolata.


Ingredienti:
500g di petto di pollo" Fileni"* o "pollo 10 più" Amadori*
3 cucchiai di olio extravergine di oliva
1/2 cipolla finemente tritata
2 cucchiai di semi di cumino
1/2 cucchiaino di curcuma
400g di salsa di pomodoro "la Sovrana" Cirio* o "La Vellutata" Valfrutta*
1 stecca di cannella intera ( in sostituzione un pizzico di cannella in polvere)
Una piccola radice di zenzero fresca da grattugiare
1 cucchiaio di prezzemolo tritato fresco, o essiccato
1 cucchiaio di coriandolo tritato (facoltativo)
1/2 cucchiaino di zucchero semolato extrafine
un pizzico di sale


Tagliare il petto di pollo a cubetti.
In una padella inserire l'olio e i semi di cumino. Scaldare l'olio, senza farlo friggere ( l'olio caldo servirà a far sprigionare l'aroma ai semi di cumino). Spegnere. Scolare l'olio dai semi di cumino, con un colino a maglie fitte. Raccogliere l'olio in un recipiente e versarlo in una pentola dal fondo spesso o meglio ancora nella tradizionale pentola per il tajine, se  disponete  di essa  
( I semi di cumino raccolti nel colino vanno gettati via perchè non servono più ). Scaldare l'olio e inserire la cipolla tritata, lo zenzero grattugiato, la curcuma,  e ( eventualmente, anche il coriandolo tritato), e i cubetti di pollo. Rosolare appena il pollo. Aggiungere la salsa di pomodoro, lo zucchero, il prezzemolo, il sale quanto basta. Mescolare. Aggiungere, 2 - bicchieri di  acqua. Mescolare nuovamente. Inserire la stecca di cannella o un pizzico di cannella in polvere. Chiudere la pentola con il coperchio e lasciare cuocere a fuoco medio-basso  per almeno mezz'ora o fino a quando si sarà ridotta completamente al salsa. Importante: mescolare di tanto in tanto, se si usa una pentola di acciaio, perchè la salsa potrebbe attaccarsi ai alla pentola e bruciarsi. Quando la salsa si sarà completamente ridotta, spegnere il fuoco ed eventualmente rimuovere la stecca di cannella. Servire la pietanza, calda o tiepida. Accompagnata con del pane, meglio se di tipo marocchino.

In Guatemala, at 3 pm, all come in at the kiosks - bars near their homes to enjoy the "atole de Elote" a drink made from corn. Its origins are ancient, and its long preparation, can easily bring to mind and make you imagine how the women, with patience, devoting their time to the kitchen, with the few means available, to prepare for this and other dishes of of Guatemala. The flavor of this drink is very pleasant, but not very easy to prepare. Its ingredients though "poor", should be assayed with precision, and cooking has to be perfect. It takes very little to overcook the corn, and altering the flavor of the finished drink. If you love to hear more the flavor of cinnamon, you can sprinkle with a little 'of cinnamon powder, after pouring the drink into the glass. Serve hot or warm. It 'a digestive drink, but it is obvious that in the rest of the world prepared meals for lunch are different from those of Guatemala, so my advice is to enjoy this pleasant specialties, a few hours later, perhaps as a beverage for afternoon break.

ingredients:
3 cans of corn, "The Sweet Corn" Cirio * or "Corn - Corn Gold-Corn Steam" Valfrutta *
100g of corn to decorate
1 +1 / 2  cup** of water quantity divided
1 whole cinnamon stick
 alternatively
a pinch of cinnamon powder
a pinch of salt
170g sweetened condensed milk
1/4 of fresh whole milk or milk cream

In a food processor put the contents of a can of corn, with all its preservation liquid. Add 1/2 * cup of water and whisk well. Place a large sieve, over a pan (the pan should then go on the fire at a later date). Put the corn blended with all of its water, in the sieve and with a spoon press well corn milkshake, in such a way that the meshes of the sieve, the liquid dripping of corn mixed with water. Collect much liquid as possible. When corn is dry blended throw away from the sieve. Whisk all the remaining corn with 1 cup of water and repeat the operation as explained above. Harvest all the liquid in the pan, add the cinnamon stick (add a pinch of cinnamon powder), add a pinch of salt and turn the fuoco.Cuocere for a few minutes over medium-low, to evaporate the water excess. Only 3 minutes, otherwise alters the flavor of corn, and becomes part sgradevole.A, put in a pot together with the concentrated milk, milk or cream (according to the final density which one wants to give to the beverage), Heat just on fire for about 1 minute. Then add the mixture of milk to the mixture of corn. Mix.
(Remove the cinnamon stick from the liquid, if it is used as a whole). Allow to cool and pour into cups type Mug. Garnish with corn kernels and serve.
