Crepes Primavera


Crepes Primavera

Questa ricetta è stata creata da Nuxia per l'arrivo della primavera. Un Piatto semplice e gustoso che vede protagonista il colore verde, che tanto viene risaltato dalla terra in questo splendido periodo di tiepido tepore

Ingredienti:
Per le crepes:
250 ml di latte
150 g di farina 00
2 uova 
1 ciuffo di prezzemolo tritato finemente
sale
pepe nero
un pizzico di noce moscata
2  cucchiai di olio extravergine di oliva

Per il ripieno:
250g di crescenza

Per nappare:
240g grammi di piselli freschi o in scatola
un trito di cipolla rossa di Tropea o  in alternativa, bianca.

Preparate la salsa: in una padella scaldare un filo d'olio e aggiungere la cipolla tritata fare appassire appena e aggiungere i piselli. mescolare velocemente e aggiungere un bicchiere d'acqua per la cottura e un pizzico di sale. Il tempo di cottura varia in base a che tipo di piselli si usino, ossia freschi, precotti, o surgelati.(Nel frattempo potrete preparare le crepes). Una volta cotti spegnere il fuoco e lasciare al caldo con un coperchio. Accendere il forno a 220° C.
Preparare la pastella delle crepes: Sbattere le uova, aggiungendo la farina, il latte, l'olio extravergine di oliva, il prezzemolo, il sale, il pepe, e un pizzico di noce moscata. ( L'olio extravergine di oliva viene aggiunto nella pastella in modo tale da non dover ungere la successivamente la padella per la cottura delle crepes. In alternativa utilizzare il burro fuso. Questo è un trucco degli chef di casa mia, di cui vado fiera!) Amalgamare bene il tutto, in modo che non si formino grumi nell'impasto. Scaldare una padella antiaderente. Versare una piccola quantità di impasto nella padella in modo da coprire con uno strato sottile il fondo della padella e cuocere per un minuto circa, entrambi i lati della crepes. Proseguire fino ad esaurimento delle crepes. Saranno in totale 8 - 12 crepes circa.
tagliate la crescenza in grossi cubetti. Calcolate un grosso cubetto per ogni crepes. Inserire ogni cubetto ad un lato di ogni crepes. poi piegarla in due parti, e infine ancora una volta su se stessa, da formare un triangolo. Rivestire di carta da forno una teglia e inserire all'interno le crepes. Infornare per 5 -10 minuti. Il formaggio dentro la crepes deve scaldarsi, ma non colare fuori dalla crepes! Nel frattempo passare i piselli al mixer con un pò di acqua di cottura. aggiungere un pizzico di pepe e aggiustare eventualmente di sale. Mixare tutto, fino ad ottenere una crema. Nappare il centro di ogni piatto con la crema di piselli. Togliere dal forno le crepes e adagiare sulla crema di piselli. Versare un filo d'olio extravergine d'oliva e servire.

Ingredients:

For the crepes:
250 ml of milk
150 g of flour 00
2 eggs

Prepare the sauce: In a pan heat a little oil and add the chopped onion and sauté just add the peas. stir quickly and add a glass of water for cooking and a pinch of salt. The cooking time varies depending on what kind of peas are used, ie fresh, precooked, or frozen. (In the meantime you can prepare the crepes). Once cooked turn off the heat and allow to heat with a lid. Turn the oven to 220 ° C - ( 425° F ) . Prepare the batter for crepes: Whisk the eggs, add the flour, milk, olive oil, parsley, salt, pepper and a pinch of nutmeg. (The extra virgin olive oil is added into the batter so they do not need to grease the pan after cooking the crepes. Alternatively use the melted butter. This is a trick of the chef in my house, of which I am proud! ) Mix well, so that no lumps in the dough. Heat a nonstick skillet. Pour a small amount of batter into the pan to cover with a thin layer on the bottom of the pan and cook for a minute or so, both sides of the crepes. Continue until all crepes. Will total 8 to 12 crepes around. Cut the cheese in large cubes. Calculate a big cube for each crepes. Place each cube with a side of each crepe. Then fold it in two parts, and finally again on itself, forming a triangle. Coat a baking sheet with parchment paper and place inside the crepes. Bake for 5 -10 minutes. The cheese inside the crepes to warm up, but does not run out of pancakes! In m
eanwhile pass the peas to the mixer with a little water cooking. Add a pinch of pepper and adjust salt if necessary. Mix everything until creamy. Put the center of each dish with cream of peas. Remove from oven and arrange the crepes on the cream of peas. Pour a drizzle of extra virgin olive oil and serve.

The fusilli sun were created on a rainy Sunday. It seems a little controversial, but just to color a gray day, I wanted to try a recipe that the color of the sun: Yellow. This recipe is very easy and very reminiscent of carbonara for his appearance. A really tasty dish: getting ready in no time, but mostly it is proof of "apprentices" in the kitchen.



Ingredients:
350g of pasta fusilli
250g cream
200g sweet bacon diced
2 sachets of saffron
Parmigiano Reggiano cheese to taste
3 tablespoons extra virgin olive oil
salt and pepper to taste


In a large pot with lightly salted water to boil and toss the pasta and cook for time indicated on the package. Meanwhile, prepare the topping. In a skillet, add oil and bacon. Ingredients for 4 people:

Fusilli del sole

I fusilli del sole sono stati creati in una domenica di pioggia. Sembra un pò controverso, ma proprio per colorare una giornata grigia, ho voluto sperimentare una ricetta che il colore del sole: Il giallo. Questa ricetta è facilissima e ricorda molto la carbonara per il suo aspetto. Un piatto davvero gustoso: si prepara in pochissimo tempo,  ma sopratutto è a prova di "apprendisti" in cucina.


Ingredienti:

350g di pasta fusilli
250g di panna liquida
200g di pancetta dolce a cubetti
2 bustine di zafferano
Parmigiano Reggiano grattugiato quanto basta
3 cucchiai di olio extravergine di oliva
sale e pepe quanto basta


In una pentola con acqua leggermente salata e in ebollizione buttare la pasta e fate cuocere per il tempo indicato sulla confezione. Intanto, preparare il condimento. In una padella , inserire l'olio e la pancetta. Aggiungere un pizzico di pepe e rosolate a fuoco medio, per un  minuto circa. Spegnere il fuoco. A due minuti dal termine della cottura della pasta, un una ciotola inserire un mestolo di acqua di cottura della pasta e sciogliere lo zafferano. Scolare la pasta e trasferire nella padella con la pancetta. Aggiungere la panna e l'acqua con lo zafferano. Amalgamare il tutto e saltare la pasta per un paio di minuti, per colorare in modo omogeneo la pasta.Salare e aggiungere del parmigiano reggiano. Spegnere il fuoco e servire la pasta.

Pancetta di Calabria DOP

ABBINAMENTO:

ottima da gustare con pane rustico o polenta, si abbina a vini bianchi freschi, spumanti o fermi.
Per la produzione della Pancetta di Calabria DOP si impiegano suini – nati in Calabria, Basilicata, Sicilia, Puglia e Campania, e allevati in Calabria – che non abbiano superato il quarto mese di età e peso non superiore a 140 chilogrammi. Si tratta di una pancetta tesa, non arrotolata e di forma rettangolare, ottenuta dal sottocostato del maiale, cui viene lascia attaccata la cotenna. Il pezzo, prima della lavorazione, deve avere un peso compreso fra 3 e 4 chilogrammi e uno spessore di 3-4 centimetri. Una volta rifilata, la Pancetta di Calabria viene sottoposta a un processo di salagione che dura da quattro a otto giorni; è poi lavata e bagnata con aceto, e può essere aromatizzata con pepe nero, pepe rosso, crema di peperoni, aceto e ricoperta di polvere di peperoncino; infine viene avviata alla stagionatura, che si protrae per un minimo di trenta giorni in ambienti con temperatura e umidità idonee. Al consumo, la Pancetta di Calabria ha una superficie di colore rosso, dovuta alla presenza del peperoncino; all’interno, di tonalità rosate, si alternano parti grasse e magre. Ha profumo intenso, gusto sapido, delicatamente dolce, aromatico e talvolta pungente. Si conserva in locali freschi e asciutti e, una volta affettata, nella parte meno fredda del frigorifero, avvolta in carta per alimenti o in un panno.


IN CUCINA


La Pancetta di Calabria si serve al naturale o leggermente scaldata, con pane rustico o polenta calda; si utilizza anche per preparare sughi.
