A pate really fantastic. Only of its kind. At first glance can be mistaken for a dessert, because of its shape like a pudding. But the ingredients of yourself reveal an elegant appetizer really worthy of being served at a dinner at a formal dinner. The 'orange combined with the salmon, make this delicate dish best served with toasted bread, better if it's special bread. For example bread flavored with herbs, bread or whole grain to five. Whatever your taste in the choice of bread, this salmon pâté give the right balance to the flavors of warm bread and crispy, released on the palate. You just have to put in the kitchen, make this pate with my recipe, and above all: try it!
Ingredients for 4 people:
400 g fillet of salmon not smoked
100 ml cream for cooking
2 tablespoons lemon juice
2 tablespoons of orange juice
zest of one orange organic
1 tablespoon of dry Marsala wine
extra virgin olive oil
Cut the salmon into small pieces. In a pan put a little olive oil extra virgin olive oil to heat. Add the salmon pieces and deglaze with the Marsala. Immediately after adding the orange juice and lemon juice. Cook for a few minutes at most. Transfer the salmon with the sauce in a baking mixer.Aggiungere a pinch of salt and black pepper. Add the cream and use the device for a few seconds until you get a thick froth. Spread the pate into individual molds portions and let rest in refrigerator for 2 hours. Garnish with orange peel to taste, cut into julienne strips.
Council plus: You can add to the decor a few cloves of peeled orange.
